Hearty Beef Barley Vegetable Soup
This is comfort food best served on a cold and/or wet miserable night. The recipe and portions I am about to list provides a full dinner and leftovers for me, my wife, and two kids (13 and 10). This recipe scales i.e. if you are feeding two people, then cut the ingredients in half.

About one hour. Much of the time will be spent waiting for the barley to fully cook. The barley needs to cook for about 40 to 45 minutes. If all other ingredients have been prepped, this will be passive time.

Instructions
  1. In a large stock pot, bring the water to a boil. Stir in Better Than Bouillon Roasted Beef Base until you have a rich, beef flavored broth. You can even go slightly “strong” on the flavor because when you add the vegetables, the moisture contained in the vegetables will dilute the stock. When the broth suits your taste, add the barley. Return to a boil, stirring frequently. As soon as the barley is boiling, lower the heat to simmer and cover the pot. If you use Goya barley, it will take about 40 to 45 minutes for the barley to cook. Once the barley is simmering, occasionally uncover and stir.
